Cream Cheese Raspberry Tart
Ingredients
Crust
• 3/4 cup butter, softened
• 1/2 cup granulated sugar
• 1 2/3 cups all-purpose flour
• 1/2 cup raspberry jam
Filling
• 1 (250 g) container cream cheese, softened
• 1/4 cup granulated sugar
• 1 egg
• 1 tsp vanilla extract
Topping
• 2–3 cups frozen or fresh raspberries
• 1/3 cup granulated sugar
• 2 tbsp all-purpose flour
Instructions
1. Make the Crust:
• Preheat the oven to 425°F (220°C).
• In a bowl, cream together the butter and sugar until smooth. Gradually blend in the flour to form a dough.
• Press the dough evenly into the bottom about 1/2 inch up the sides of a 10-inch (25 cm) springform pan.
• Spread the jam evenly over the bottom of the crust.
2. Prepare the Filling:
• In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract with an electric mixer until smooth.
• Pour the filling over the jam layer and spread evenly.
3. Make the Topping:
• In a bowl, toss the raspberries with sugar and flour until well coated.
• Spoon the raspberry mixture evenly over the cream cheese filling.
4. Bake the Tart:
• Bake at 425°F (220°C) for 15 minutes.
• Reduce the heat to 400°F (200°C) and bake for an additional 20–30 minutes, or until the filling is set and the crust is golden.
5. Cool and Serve:
• Let the tart cool completely in the pan to allow filling to set fully.
• Once cooled, remove the pan rime and serve.
