HOW TO COOK AN OMELETTE FRITTATA IN THE INSTANT POT

Learn how cook an omelet/frittata in the Instant Pot. This recipe is so versatile you can prepare it with your choice of meats and cheese. A perfect recipe for those college students who don't have a stovetop in their dorms and for those who are just wanting to try new things.
Non-stick spray
6 large eggs
⅓ cup heavy cream NOTE: USING MILK MAY CAUSE IT TO BURN OR CURDLE
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1/4 cup diced onion
1/2 cup chopped breakfast sausage
1/2 cup shredded cheddar cheese
1 tbs. grated parmesan cheese
2 cups cool water
Parsley for garnish
Directions:
Add the water and the trivet to the Instant Pot
In a bowl add the eggs and cream or milk and whip with a whisk or fork.
In a 6 inch Instant Pot high-sided round pan spray generously with non-stick spray.
Add the sausage, cheese and seasonings. Mix well.
Cover the pan tightly with aluminum foil and place on top of the trivet.
Replace the lid making sure the vent know/switch is set to the "seal" position.
Adjust to high pressure and set cooking time to 8 minutes. Press start.
After the cook time has elapsed allow the pot to naturally release pressure for 10 minutes then do a quick release by moving vent knob/switch to the vent position. Wait for the lid pin to drop before removing the lid.
Remove the lid and carefully and check the doneness of the eggs with a fork. It should come out clean. If it's not, replace the lid and cook on high pressure for two more minutes with a quick release of pressure.
Remove the pan and run a butter knife along the edges to break loose from the pan then transfer to a serving dish.
Garnish with the parsley, slice and serve.
