How to make Greek Avgolemeno Soup

FINALLY we got a avgolemeno recipe. I will admit, this recipe is HARD becuase yiayia does everything with her eyes, so getting proper measurements is a nightmare, SO….in saying this, as you’re watching I give LOTS of visual cues to what you should be looking out for with a thick or thin soup - so choose what you love!
Ingredients:
Stock: BIG pot of water (the biggest pot you have, this is for the stock so you’ll have extra)
8-12 chicken drumsticks/1 whole chicken or chicken necks (whatever you like!) 2 brown onions, whole 3 medium carrots, whole 1 whole celery bunch, more leaves the better2 medium white potatoes, halved
8-10 vegetable stock cubeswater to completely cover
To make the soup:
Start with 3.5L of the stock in the pot
1.5 cups of long grain rice, washed well 1/2 lemon, juiced 1 cup washed basmati rice or long grain2 eggs, separated
Directions:
1. Add chicken, water, onion, carrot, celery, potato, stock cubes into a deep pot a cook for 3-4 hours on low.
2. Once cooked. Strain the stock through a sieve so you stop those little chicken pieces and celery leaves coming through. With a new pot, start with 3.5L of the stock and bring to a boil. Add in rice (washed well) and cook for 15 mins or until rice is almost fully cooked. When you are at this point, if you have lots of stock still in the pot, this is the point when you might want to remove a little depending on if you’d like a thick or a thin soup. The more you take out, the thicker your soup would be. In my opinion, I love a thick soup! If you are looking at the bot and there is a thin layer over the rice, this is perfect. Remove from the heat.
3. Beat egg whites until fluffy. Add egg yolk and continue to beat. Add 2-3 spoonfuls of the stock in the pot into the egg bowl (dont worry if the rice gets in). Continue to beat. Add lemon and beat for a further 10 seconds.
4. Pour egg mixture over the rice and stir. Season with pepper and add some of the chicken from above in!
