Tom’s chefs debut a new dish on the pub menu celebrating the freshest, seasonal ingredients. They’ve taken delivery of freshly caught Cornish sea bass, and Tom sets to work filleting and brining the fish ahead of lunch service. It will be served with monk’s beard, a tangy and nutritious Italian ingredient which is only in season for a few weeks a year. Tom takes us into his test kitchen to create a simple sea bass main course, easy to replicate at home. He combines more super-fresh ingredients into his fried courgettes with chilli and goat’s cheese starter and his colourful rhubarb crumble dessert.
