🥦 Broccoli Cheddar Soup in a Bread Bowl
Ingredients (2-4 servings)

For the soup:
2 tbsp butter (or olive oil)
1 medium onion, finely chopped
2 garlic cloves, minced
2 medium carrots, grated or finely diced
3 cups broccoli florets (fresh or frozen, chopped small)
3 tbsp flour (or cornstarch slurry for gluten-free)
3 cups vegetable or chicken stock
2 cups milk (or half milk + half cream for richer soup)
1 cup grated sharp cheddar cheese (plus extra for topping)
Salt & pepper to taste

For the bread bowls:
sourdough or small round loaves of crusty bread
Olive oil or butter (for brushing)

🥔​ Potato Leek Soup: (2-4 servings)
3–4 medium potatoes (600–700 g, peeled & diced)
2–3 medium leeks (white & light green part only, cleaned & sliced)
1 medium onion
2–3 tbsp butter or olive oil
1 liter vegetable or chicken stock (4 cups)
200 ml (15–18% cooking cream)
Salt & black pepper, to taste
1 bay leaf (optional, for simmering)


🌮​ Chicken Tortilla Soup: (2-4 servings)
2 chicken breasts
1 can (300–400 g) corn, drained
2 carrots, diced
1 bell pepper, diced
1 avocado, sliced (for garnish)
1 bag tortilla chips (for topping)
1 onion, chopped
1 can (400 g) diced tomatoes
1 tbsp tomato paste
1 liter chicken stock (or water + bouillon cube)
2 tbsp olive oil
Salt & pepper and paprika powder to taste
cheddar cheese (for garnish)
greek yoghurt (for garnish)
juice of 1 lime
