We are growing cover crops to add organic matter and nitrogen to our rocky clay loam soil here in the Central Arizona Highlands. Planting a variety of cover crop species is beneficial in many ways that improve soil health, but so many farmers do not utilize cover crops because it takes a while to grow them and that time is often used to grow some other type of cash crop like soy beans. Investing in your soil can be one of the most productive things if you are patient however.
