Ingredients
600–700 g pumpkin
1 tablespoon tarhana
2 onions
1 carrot
2–3 celery stalks
3–4 cloves garlic
1 orange
1 tablespoon butter
1 cup milk
4 tablespoons olive oil
6 cups hot water
Salt and black pepper
Instructions
1- Add the olive oil to a soup pot. Add the chopped onions, carrot, and celery, and sauté.
2- After 3 minutes, add the pumpkin and cook all the vegetables together for 5–6 minutes.
3- When the onions start to change color, pour in the hot water.
4- In a small bowl, mix the tarhana with a bit of warm water to dissolve it.
5- Add the dissolved tarhana to the soup pot.
6- Cook for about 30 minutes, or until the pumpkin softens.
7- Once the pumpkin and carrot are tender, blend the soup until smooth.
8- After blending for about 4–5 minutes, add the orange juice.
9- Stir in the butter and milk, then season with salt and black pepper.
10- Let the soup simmer for another 2 minutes and serve.
