I've finally updated the Scout32 project and included a double sized version! The entire chassis and tracks are 3D printable, and there are now multiple code paths available depending on what motor controller or ESC you use! The Arduino code is updated with newer libraries and included failsafes to improve signal and reliability.
If you're looking to use this as a STEM project for students, feel free to use any of the materials provided in any way you would like. I recommend the MX1508 version using N20 gear motors, as it's by far the cheapest and most simplified version, and you don't have to worry about servo calibration.
For simplicity's sake, I only have two wiring diagrams, one for the original servo edition, and one for the MX1508 version, though you can mix and match components to use your own power source. The ScoutXL wiring is basically the same as the Servo version, except the ESC's onboard regulator will power the ESP32 instead of the other way around. I also used GPIO4 with an external transistor to power the LEDs, as shown in this video.
