Tips to properly grill large fish jaw:
(based on years of experience)
1. Make sure that the thickness of the fish is as same as possible.
2. The fish must be at room temperature.
3. Rub the seasoning until salt dissolves.
4. Grill skin side first to cook the meat in the crevices.
5. The baste starts with calamansi juice then add soy sauce making sure that the calamansi juice will still be visible on the side of the mixing bowl then add cooking oil which is twice the amount of the calamansi-soy sauce mixture. (if done right, this is an aromatic baste)
6. Remember to baste every time you flip the fish.
7. COOK IN HIGH HEAT. This is not a barbecue. This is grilling. High and Fast.
