WRITTEN RECIPE
INGREDIENTS
Pork and Marinade
16 oz pork shoulder/butt/belly/loin
1/2 onion, minced
3 garlic cloves, grated
1 tsp ginger, grated
1/2 tsp baking soda
2 tsp corn starch
2 tbsp soy sauce
Sweet and Sour Sauce
2 tbsp pineapple juice (from canned pineapple)
3 tbsp ketchup
3 tbsp apple cider vinegar
1 tbsp soy sauce
1/2 tbsp oyster sauce
1/3 cup granulated sugar
1 tbsp corn starch
1/2 cup water
Stir Frying
1 tbsp oil
1 tsp ginger, grated
2 garlic cloves, grated
1 green bell pepper, chopped (optional)
1 red bell pepper, chopped (optional)
pineapple (from canned pineapple)
Deep Frying
2 tbsp all purpose flour
1/2 cup corn starch (might need more as needed for coating)
Neutral oil (I use canola)
DIRECTIONS
Cut pork into roughly 1 inch pieces
In a bowl, combine pork, minced onion, grated ginger, grated garlic, corn starch, baking soda, and soy sauce. Mix well to assure all pork is covered
Marinate pork for at least a couple hours
In a bowl, combine pineapple juice, ketchup, apple cider vinegar, soy sauce, oyster sauce, sugar, corn starch, and water. Whisk until solids are fully dissolved
After pork has finished marinating, start preheating oil in a pan. You want enough oil to fully cover pork (about 2 inches)
Preheat oil to 350 degrees Fahrenheit
Sprinkle flour over marinated pork and mix. Allow to rest for 1-2 minutes to let the flour set into the pork
Coat pork with corn starch and deep fry in batches for 3-4 minutes
After all pork has been deep fried, allow oil to heat to 400 degrees Fahrenheit
Deep fry pork for a second time for 1 minute
Set aside
In a clean pan or wok, preheat on high heat and add oil
Stir fry garlic and ginger for 30 seconds
Add bell pepper (if using) and stir fry for 2 minutes
Remove bell pepper if you don't want it in the final product (to be image accurate)
Add pineapple and sauce
Bring to a boil then simmer for 2 minutes. If sauce is too thick, feel free to add water
You want the sauce to thick enough where you see the bottom of pan if you pass a spoon through the sauce
Add pork in and quickly toss in the sauce to coat
Immediately serve with white rice
