Cow macarons with Italian meringue
For the shells you will need
Almond powder 100 g
Powdered sugar 100 g
Egg white 36 g
Black and pink food coloring
After doing the macaronage leave a small quantity for pink and black batter.
Sugar syrup
Water 25g
Caster sugar 80 g
Meringue
Egg white 40 g
Start whipping egg white when sugar syrup reaches 115C degrees. Add a tablespoon of caster sugar. When syrup is at 118C, pour it slowly into the meringue. Beat for about 4-5 minutes.
First add 40 g of meringue into the almond paste. Mix it and then add 80g of meringue more and do the macaronage.
Bake macarons in preheated oven at 150C degrees for 15 minutes. After about 7 minutes turn the trays around so that the baking is more even.
After macarons are baked and cooled you can fill them with the desired flavor.
As some parts broke while baking 😖😖😖I decided to decorate and hide the cracks with royal icing.
