Elote Inspired High Protein Dip 🌽

Okay honestly it’s not all that much elote-like but a lot of shared ingredients. I just love corn!!!

TO MAKE—
➀ Prep the tofu ricotta dip—the recipe is in my cookbook and you’ll end up with a little extra!
➁ Char an ear of corn over a grill, open flame or using a torch. If you want it cooked through more or you’re using canned or frozen corn, sauté the kernels in neutral oil along with minced garlic, salt and pepper.
➂ Spread the dip in a shallow dish, top with the corn, thinly sliced jalapeño, cilantro (or other herb if you, too, have the soap gene) and lime wedges. Enjoy with chips or with a spoon.
