腌制材料/Marinated ingredients
• 1/3湯匙五香粉 /1/3five spices powder
• 1湯匙鹽 /1tsp salt
• 1湯匙糖 /1tsp sugar
• 1湯匙黑胡椒粉/1tsp black pepper powder
• 1/2湯匙姜粉/1/2ginger powder
• 按壓鴨肉,然後放入冰箱腌制2小時以上/massage with duck breast and then put in the fridge marinate for 2 hours
自製家用熏鍋需要/smoke pot need
• 1個帶蓋子的鍋/pot with cover
• 1個圓形蒸架/food stand
• 鋁箔紙/aluminum foil
熏鴨食材/smoke duck ingredients
• 2大匙茶叶/2tsp tea leaves
• 1杯白米 /1cup of rice
• 3湯匙糖 /3tsp sugar
•1湯匙玉桂皮粉/1tsp cinnamon ground
•1湯匙迷失香/1tsp rosemary leaves
• 4-6片橙皮乾/4-6pcs dried orange peel
熏鴨步驟/Smoked duck step
自製熏鍋:用鋁箔紙殿鍋子底部做成一个碗的形状,然后把熏鸭食材全倒入混合/Use aluminum foil paper to make the bottom of the pot into a bowl shape, then pour all the smoked duck ingredients and mix well
-用鋁箔紙包裹蓋子,使鍋子和蓋子上的箔片密合/Wrap the lid with aluminum foil to make the pot and the foil on the lid close
-將蒸架放在熏鸭食材上面/Place the steaming rack on top of the smoked duck ingredients
-鴨皮朝上放在熏架上/Put the duck skin up on the smoker
-蓋上用鋁箔紙包好的鍋蓋,转大火熏/Cover the pot with aluminum foil and turn to high heat
-當開始看到煙的時候,转中火熏15分鐘,可以按照個人喜好來調整熏的時間/when you start to see smoke, switch to medium heat for 15 minutes. You can adjust the smoking time according to personal preference
-移開熏好的鴨胸肉,放置10分鐘/take out the smoked duck breast and let stand for 10 minutes
-倒入少许的油到鍋裡,開小火,鸭皮朝下,將鴨胸肉煎至金黄带一点焦即可/Pour a little oil into the pan, turn on a low fire, and the duck skin down, fry the duck breast until it is golden and slightly charred.
