How to make Mogador macarons from scratch - Pierre Herme recipe

This one is one of my favorite flavor from his creations. I am not a fan of plain chocolate macarons, but the I love the tanginess that passion fruit brings to this ganache.
Ingredients (for about 40 macarons)
150g almond powder
150g powdered sugar
150g granulated sugar
110g egg whites (about 4)
37.5g water
Yellow food coloring
125mL passion fruit juice
(I couldn't find any fruit or 100% juice at this time but please use real juice for better flavor!)
275g Valrhona Jivara milk chocolate
50g butter
Cocoa powder
Tips:
Store the macarons in the fridge and take them out 30 minutes before.
Macarons are best enjoyed 24 hours after to allow the filling and shells flavors and textures to develop and combine perfectly.
