Make these Indian-style stuffed sweet peppers with a soft, spiced potato filling that’s tangy, flavorful, and ready in just 15 minutes. This vegetarian recipe is perfect as a quick snack, side dish, or even a light lunch. The freshly crushed spice paste with garlic, white pepper, and coriander seeds takes the flavor to the next level!
Whether you call them stuffed capsicum, bharwa shimla mirch, or stuffed bell peppers, this recipe works beautifully with sweet long peppers or regular bell peppers.
🌿 Ingredients:
4 sweet long peppers (or capsicum)
3 medium potatoes (boiled & mashed)
1 small onion (chopped)
3–4 garlic cloves
1 tsp white pepper
1 tsp coriander seeds
1 tsp red chilli powder
1/4 tsp turmeric powder
1 tbsp lemon juice
2–3 tsp oil
Salt to taste
Steps:
Crush garlic, white pepper, and coriander seeds in a mortar & pestle to make a fresh spice paste.
Heat oil in a pan and sauté the paste for 1 minute until aromatic.
Add chopped onion and cook until soft.
Mix in mashed potatoes, red chilli, turmeric, and salt.
Add lemon juice and stir well to combine.
Slice and deseed the sweet peppers, then stuff them with the potato mixture.
Sauté in a pan, add a splash of water, cover, and cook until peppers are tender.
