Ingredients:
For the Mashed Potato Pastry:
200g mashed potatoes (cold, no added milk or butter)
150g all-purpose/ plain flour
50g cornstarch
50g cold butter, cubed
1/2 tsp salt
1 egg yolk (optional, for richer pastry)
Ice-cold water (as needed)
For the Filling:
2 large onions, thinly sliced
1 tbsp butter
1/2 tsp sugar
4 tbsp water
1 tbsp olive oil
200g cheddar cheese, grated
100g cream cheese
1 tsp Dijon mustard
1/2 tsp salt (to taste)
1/4 tsp black pepper
1/2 tsp dried thyme (optional)
For Assembly:
1 egg, beaten (for egg wash)
Preheat your oven to 190°C (375°F).
Cut out circles (about 12-15cm in diameter)
Bake for 20-25 minutes or until golden brown.
