🥘 Vegetable Biryani (Dum Style)
🍽️ Serves: 4
⏱️ Prep Time: 20 mins | Cook Time: 30–35 mins
✅ Ingredients:
For Rice:
Basmati rice – 1½ cups (soaked 30 mins)
Water – 6 cups
Bay leaf – 1
Green cardamoms – 2
Cloves – 3
Cinnamon – 1 small stick
Salt – 1 tsp
For Vegetable Masala:
Mixed vegetables (carrot, beans, peas, potatoes) – 1½ cups (chopped)
Onion – 1 large (sliced)
Tomato – 1 (chopped)
Ginger garlic paste – 1 tbsp
Curd (thick yogurt) – ½ cup
Green chili – 1 (slit)
Mint leaves – ¼ cup
Coriander leaves – ¼ cup
Turmeric powder – ½ tsp
Red chili powder – 1 tsp
Biryani masala – 1½ tsp
Salt – to taste
Oil – 2 tbsp
Ghee – 1 tbsp
🔥 For Dum (Layering & Cooking):
Fried onions – ½ cup (optional but recommended)
Saffron – a few strands soaked in 2 tbsp warm milk
Ghee – 1 tbsp
Kewra or rose water – few drops (optional)
👨🍳 Instructions:
🔹 Step 1: Cook the Rice
Boil 6 cups of water with salt and whole spices.
Add soaked rice and cook until 80% done (grains should still be firm).
Drain and keep aside.
🔹 Step 2: Prepare the Vegetable Masala
Heat oil and ghee in a pan. Add sliced onions and sauté till golden.
Add ginger-garlic paste and green chili. Sauté until raw smell goes.
Add chopped tomatoes and cook until soft.
Add turmeric, red chili, and biryani masala.
Add chopped vegetables and sauté for 2–3 mins.
Add curd, salt, mint, and coriander. Mix well and cook until veggies are tender and masala thickens.
🔹 Step 3: Layering the Biryani
In a heavy-bottom pot, spread half of the cooked vegetable masala.
Add half the cooked rice over it.
Drizzle some saffron milk, fried onions, ghee, and kewra water.
Repeat the remaining masala and rice in layers.
Cover tightly with a lid or seal with dough.
🔹 Step 4: Dum Cooking
Place a tawa below the biryani pot and cook on low flame for 15–20 minutes.
OR
Bake in a preheated oven at 180°C for 20 minutes.
🥗 Serve With:
Onion raita
Cucumber salad
Boondi raita or mirchi ka salan
