Cast Iron Pizza and Breadsticks

There is just something so delicious with homemade pizza. Now don’t get me wrong there are some phenomenal pizzas out there from lots of different restaurants but for the days when you want to make one at home a cast iron pizza is the way to go.
I use a 10 inch skillet to cook the breadsticks and pizzas on. A single dough recipe can make 3 - 10 inch breadsticks or 3 - 10 inch pizzas. We typically do a breadstick and 2 pizzas or if using the large rectangular cast iron pan a single large pizza and breadsticks. I just use 1/3 of the dough for breadsticks and the other 2/3 for the large pizza.
Cast Iron Pizza and Breadsticks:
1 pizza dough
-1 cup warm water
-2 TBSP olive oil
-1 TBSP sugar or honey or maple syrup
-1 1/2 tsp salt
-1 cup bread flour
-1 to 1 1/2 cups of all purpose flour
-2 1/4 tsp of active dry yeast
Warm water in the microwave for about 1 minute. You want it warm, not boiling nor even hot. You will kill the yeast. Add to a mixer along with your olive oil, sugar, salt, yeast, bread flour, and a cup of all purpose flour. Start kneading the dough. Slowly add in the other half cup of flour until the dough quits sticking to the sides of the bowl. Could take a little more or a little less of the 1/2 cup. Knead a few minutes longer then let the dough rest for 10 minutes.
Breadsticks:
-1 pizza dough (can make 3 - 10inch skillet breadsticks)
-1 to 2 tsp olive oil
-sprinkle of garlic powder
-sprinkle of course or fine salt
-1/4 to 1/3 cup of mozzarella cheese
-fresh grated parmesan cheese (or from the bag or container)
-optional corn meal
Turn cast iron skillet or skillets on over low heat to warm up. After dough rests break off into the pieces you are going to use. Roll out dough to the size skillet you are using. (Optional sprinkling of corn meal can be put on the skillet) Put dough on skillet and brown each side. Should only take a couple minutes. After browned, turn off heat and top with olive oil, then garlic powder and salt. Add on the mozzarella and finish with parmesan. Put in the broiler for a couple minutes on low. Watch carefully after a minute. It will burn quickly. Once it’s melted and browned to your desire, pull from broiler, cut up and enjoy.
Pizza:
-1 pizza dough (can make 3 - 10 inch skillet pizzas)
-1 jar pizza sauce (whatever kind you like best)
-8 ounces of shredded mozzarella cheese divided between pizzas (can use more or less for how cheesy you like your pizzas)
-assorted pizzas toppings
-fresh graded parmesan cheese (or from a bag or container)
-optional corn meal
Turn cast iron skillet or skillets on over low heat to warm up. After dough rests break off into the pieces you are going to use. Roll out dough to the size skillet you are using. (Optional sprinkling of corn meal can be put on the skillet) Put dough on skillet and brown each side. Should only take a couple minutes. After browned turn off heat and top with pizza sauce then mozzarella. Add on your favorite pizza toppings and finish off with parmesan cheese. Put in the broiler on low for a couple minutes, watching carefully for pizza to be done. It will burn quickly. Pull out when cheese is melted and crust is browned to your liking. Slice up and enjoy!
