For curing you need a gallon of water, 1/2 cup sugar, 2 cups kosher salt, 2 1/2 tablespoon pink salt, 1/2 cup garlic powder, peppercorn, bay leaves, red chili, Szechuan peppercorn, 6oz molasses, after cooking all the curing solution please let it cool down before adding hamhocks, place into refergator for 5 days before smoking, I smoked for 10 1/2 hrs indirect. I was inspired by @bbqsouthernstyle
it turned out Great.
