Ingredients Needed: This made a large batch of Salsa. I will show Matt's recipe and list my changes.
6 Large Tomatoes (Quartered)
2-3 Sweet Vidalia Onions (Quartered)
6 Jalapeno Peppers (Halved) (I used 7 in this video)
3-4 Cloves of Garlic (I used an entire bulb lol)
6 Mini Sweet Peppers (Halved)
1 Bunch of Fresh Cilantro
Olive Oil
Salt and Black Pepper
Directions:
Prepare you veggies and place in a large foil pan. Add Olive Oil and mix to coat all Veggies nicely. Add Salt and Black Pepper to taste as well. Pre-heat your cooker to "low smoke" or 160 degrees Fahrenheit and place tray in cooker. Cook for 2.5 hours mixing/turning veggies every 30-45 minutes. Remove from cooker and place in fridge for 1 hour to chill. Blend in blender (add rendered juices IF NEEDED as you don't want it to be too watery). Place back in fridge for 24 hours. Taste and add salt/pepper if needed. ENJOY!!!!
