In this wine class and tasting we take a deep dive into Sangiovese and Chianti, as well as Sangiovese in California. A tricky grape with a prickly disposition that is easily misunderstood, Sangiovese also promises immense complexity and ageability. Paul goes into a deep discussion of Chianti, its many zones, soils and climate types as well as history and the changes Chianti has been through in the last 150 years. I then pickup its history in California and then go deep into the agricultural side growing five different types in Lake County. Then we go through winemaking practices, food pairing, and then a comparative tasting of Italian and California examples.
