Ingredients:
Potatoes – 4–6 large tubers
Vegetable oil (for frying) – 1–1.5 liters
Salt – to taste
Water + ice (for soaking)
Preparation:
Peel the potatoes.
Cut into 0.5–1 cm thick strips. Try to keep the pieces the same size.
Soak the potatoes in ice water for 30–60 minutes. This will remove excess starch and make the fries crispier.
Remove from water, dry thoroughly with paper towels.
Frying (in 2 stages):
Stage 1 – pre-frying (blanching):
Heat the oil to 150°C.
Fry the potatoes in batches for 2–3 minutes, until soft but not browned.
Remove and let drain on a paper towel.
Stage 2 – final frying:
Increase the temperature to 180–190°C.
Fry the potatoes again until golden brown (another 2–3 minutes).
Remove, let drain from the oil.
Serving:
Salt to taste immediately after frying.
Serve hot with ketchup, mayonnaise or your favorite sauce.
