😍 大家好,我是芬姐!「蒜香豬肉」是大家敲碗已久的料理,小幫手小時候常欽點這道「甜甜的肉」,而且每個嘗過台菜一姐這道菜的人,都讚不絕口,要我們拍出來它的做法。雖然是吃多容易發胖的三層肉,一姐居然能煮得好吃不油膩,這其中的小撇步,今天就不藏私大公開囉!
「蒜香豬肉」
食材(約6~8人份):
💛三層肉1.5斤 (900克)
💛蒜頭3大顆(約110克)
💛薄鹽醬油(屏科大)5匙
💛米酒頭1匙
💛紹興酒1匙
💛水0.5~1碗
💛糖0.5~1匙
💛胡椒適量
💛辣椒(選用)
煮法:
👉1.切豬肉 :三層肉切1公分多的厚度。
👉2.調和食材 :將三層肉、蒜頭、米酒頭、紹興酒、糖、醬油、水、辣椒、胡椒粉放入鍋中。
👉3.煮豬肉 :中火將所有材料煮滾,蓋蓋子、關小火,連續悶煮30分鐘 。
👉4.調味道 :試吃甜鹹度,再調味至喜歡的程度。
👉5.慢煨集豬油 :關小火加蓋慢慢煸,豬油會慢慢被逼出來,時間將近20分鐘,將豬油收集可拌菜或炒飯。逼油之後的三層肉,可去除油膩感。
👉6.裝盤配色 :燙一把青菜,在旁邊擺盤配色就完成囉!
"Garlic Pork Belly Recipe (Taiwanese flavor)"
Ingredients (Serves: 6 to 8):
💛Pork belly 900g
💛Garlic 3 cloves (about 110g)
💛Soy sauce 5 tablespoons
💛Rice wine front distillation 1 tablespoon
💛Shaoxing wine 1 tablespoon
💛Water 0.5~1 bowl
💛Sugar 0.5~1 tablespoon
💛White pepper (according to your likes)
💛Chilli (optional)
Directions:
👉1.Cut Pork Belly: Thickness about 1.5~2cm.
👉2.Mix Ingredients: Put all the ingredients into the wok.
👉3.Cook Pork: Cook the pork with medium heat until it’s boiling. Put the lid on and simmer it for about 30 min. Stir fry the pork every 5 min.
👉4.Tune Flavors: Try the sweetness and saltiness, and add soy sauce or sugar to your likes.
👉5.Simmer Pork & Collect Lard: Simmer the pork for about 20 min and collect the lard. This step is quite important as it removes the greasy feeling of the pork.
👉6.Dish up Garlic Pork: Blanch a handful of greens. Dress the dish up with green vegetables and put some chili on top of it to add more colors to the dish.
