Low-Carb Vanilla Sour Cream Cake
Ingredients
Low-Carb Flour Blend 2: 80g (2.82 oz)

Instructions
Prep ingredients: Ensure all ingredients are at room temperature.
In a bowl, combine dry ingredients: low-carb flour blend, coconut flour, baking powder, Truvia, and salt. Set aside.
In a separate bowl, combine butter, sour cream, and allulose. Mix until combined, then set aside.
Add the dry mixture to a stand mixer fitted with the whisk attachment. Turn the mixer on low speed and add in almond milk. Scrape the sides of the bowl.
Add the butter mixture and mix at medium speed.
Add the egg and vanilla, then continue mixing for an additional 2-4 minutes.
Scrape the sides and bottom of the bowl. Pour the batter into 3 round molds.
For mthe icrowave method: Prepare a hot water bath. Place the molds in the hot water bath and microwave for 1.5–2.5 minutes.
Icing:
In a small bowl, combine bocha sweet, butter, vanilla butter emulsion, and almond milk. Stir. If the icing is too thick, add an additional ¼ teaspoon of almond milk and stir until smooth.
Add fresh strawberries or any fruit of your choice between cake layers. Enjoy!

Heavy Whipping Cream: 60mL
Pecans (raw): 1 Cup (99g / 3.49 oz)
Instructions
Slowly brown the butter over medium heat.
Stir in the sweetener and cook for 2-3 minutes at medium heat.
Add in heavy cream and unsweetened almond milk. Stir constantly until the mixture turns a caramel color.
In a separate small cup or bowl, combine guar gum with 10g of allulose, and mix well.
Stir this mixture into the caramel sauce, followed by the shredded coconut flakes and pecans.
Stir until well combined, then pour into a container and let it cool completely to thicken.
Milk Frosting
Ingredients
Extra Heavy Whipping Cream (Winco): 1 Cup (Zero Carb)
Powdered Bocha Sweet: 12g (0.42 oz)
Guar Gum: 1g (0.04 oz)
Instructions
In a cold metal bowl, combine the cream and 10g of sweetener. Whip until almost firm.
Mix the remaining 2g of sweetener with the 1g of guar gum. Sprinkle this into the whipped cream and continue to whip until desired stiffness is reached.
