Ingredients:
For the curry paste:
1/2 cup grated coconut
2-3 dried red chilies
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala powder
Salt, to taste
2 tablespoons coconut oil
For the curry:
1 pound fish (any white fish works), cut into small pieces
2 medium onions, chopped
2 cloves garlic, minced
1 medium tomato, chopped
1 tablespoon tamarind paste
1 tablespoon fish curry masala (optional)
2 cups coconut milk
Fresh cilantro, for garnish
Instructions:
1. Grind the curry paste ingredients into a smooth paste.
2. Heat coconut oil in a pan and sauté onions, garlic, and ginger until softened.
3. Add the curry paste and sauté for 2-3 minutes.
4. Add the fish pieces and cook until they start to flake.
5. Add the tomato, tamarind paste, and fish curry masala (if using). Mix well.
6. Pour in coconut milk and bring to a simmer.
7. Reduce heat and cook for 10-15 minutes or until the fish is cooked through.
8. Season with salt to taste.
9. Garnish with cilantro and serve with rice or roti.
