8 pieces of Cod (same proportion sized)
Marinade
2 tbsp shaoxing wine
2 tsp sea salt
2 tsp freshly cracked black pepper
Batter
1 c self rising flour
1 tsp garlic powder
1 tsp onion powder
2 tsp salt
2 tsp white pepper
2 oz carbonated sparkling water
1 tbsp corn starch
Dredge
1 cup Cornstarch
0.5 tsp salt
0.5 tsp white pepper

INSTRUCTIONS
Put clean fish into a bowl pour on shaoxing wine, and sprinkle liberally with salt and pepper. Rub into the fish. Cover and refrigerate.
Mix all the batter ingredients adding carbonated water until a thickish pancake batter has been achieved. Cover and refrigerate for an hour.
Coat fish in cornstarch.
Dip into batter
Fry fish until it’s deep golden brown and floats.
Tartar Sauce Recipe
Ingredients 1 cup olive oil mayonnaise
1/2 c sweet pickle relish 2 tsp freshly squeezed lemon juice 1 tsp Dijon mustard
1 tbsp minced fresh chives2 tbsp minced shallot 1 tsp sea salt
1/ tsp sugar
1/2 tsp dried dill herb
1/2 tsp freshly ground black pepper ¼ tsp cayenne pepper 1 tbsp minced fresh parsley
