Goan Style Pineapple 🍍 Sasav l अननस सांसव l Authentic Goan Recipe l Sasav #konkani @GoanSpiceHouse
INGREDIENTS:
Medium Ripe Pineapple – 1 big size
For gravy paste
Grated coconut – 1 big size
Kashmiri chillies – 5
Dry red chillies – 10 to 12 (small sizes)
Turmeric powder – ½ tsp
Water as per requirement
For Tadka
Oil – 4 tbsp
Mustard seeds – 1 tbsp
Fenugreek seeds – ½ tbsp
Hing – ¼ tbsp
Curry leaves
Grated jaggery – ¼ cup (as per sweetness of pineapple)
Salt to taste
METHOD/PREPARATION
Step 1: wash and cut pineapple
Rinse the pineapple under cool running water, dry with a clean kitchen towel or paper towel. Cut ½ inch of the top and ½ inch of the bottom to create a flat base. Remove the outer skin, remove the brown spot and then cut pineapple into desire shape.
Step 2: curry / gravy paste.
Grind all ingredient mentioned above to a medium fine paste. add water if required while grinding.
Step 3: Tadka & final process
In a kadai, heat oil. Add mustard seeds, fenugreek seeds, Hing and curry leaves. once mustard seeds started popping up. Add pineapple pieces and mix well in tadka. Add 1 cup of water and grated jaggery. Mix well, cover and cook on medium to low flame for 10 minutes. after 10 minutes add ground paste, add water to adjust consistency of gravy. Gravy should be medium consistency neither too thick or too thin. Mix well, cover and cook for 10 minutes. keep stirring in between. Add salt to taste and cook for 5 minutes more. Once gravy become thick switch off the flame and serve it.
Serve pineapple sasav with steamed rice, chapati or bhakri.
