Catching Louisiana Saltwater Catfish (Sail Catfish/Gafftop) and Eating Them

I went fishing down in Empire, Louisiana to try to catch speckled trout. I launched at Delta Marina ($10 launch) and went down to the beach of Bastian Island on the Gulf. The day was really pretty with low winds, nice tidal movement, and clear skies. I saw plenty of dolphins feeding and thought I should have caught some trout. I hooked up to what I thought was a huge redfish and possibly a shark that snapped my line. I fished along the beach for a while and was only catching sailcats or gafftops. I went into the marsh behind the island and still only caught sailcats! So, I decided to keep them, cook them up, and see what they taste like.
