Ingredients:
Dough:
470g all-purpose flour
60g cocoa powder
110g butter
120g honey
130g sugar
1 teaspoon baking soda
1 tablespoon vanilla extract
Pinch of salt
3 eggs
Cream:
500ml sour cream
80g powdered sugar
2 tablespoons cocoa powder
2 tablespoons honey
1 tablespoon vanilla extract
500ml heavy cream
Glaze:
120ml heavy cream
100g chocolate
Instructions:
Dough:
Preheat the oven to 180°C (350°F).
Sift together the flour and cocoa powder, then set aside.
Heat the butter, honey, and sugar over low heat, stirring constantly until it darkens. Remove from heat and stir in the baking soda.
Lightly beat the eggs and add them to the butter mixture. Mix well, then add the flour and cocoa mixture. Stir until smooth.
Transfer the dough onto a lightly floured surface and divide it into 8 equal parts.
Roll out each piece of dough on parchment paper into a 20cm (8-inch) circle, prick with a fork, and bake for 7 minutes in the preheated oven.
Allow the honey cake layers to cool while you prepare the cream.
Cream:
Mix sour cream, powdered sugar, cocoa powder, and honey by hand. Whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the sour cream mixture until smooth.
Glaze:
Heat the heavy cream until steaming, then pour it over the chocolate pieces. Stir until the chocolate is melted.
Allow the glaze to cool and thicken while you finish assembling the cake.
Cake Assembly:
Place the first honey cake layer on a decorative platter and spread with cream. Continue alternating layers of cake and cream.
Finish the cake with a layer of cream. If there is extra cream, you can spread a thin layer around the sides of the cake.
Use a spoon to drizzle chocolate glaze over the top of the cake and create decorative drops.
Decorate the cake according to your preference with whipped cream, chocolate pieces, caramel, etc.
