Ingredients – Cake

1 cup finely grated carrot, lightly sautéed (about 120 g)

1 cup all-purpose flour (125 g)

½ cup sugar (a mix of white and brown, about 100 g)

½ cup neutral oil (100 ml )

2 eggs

¼ cup chopped walnuts (optional)

1 tsp baking powder

1 tsp ground cinnamon

A pinch of nutmeg (optional)

½ tsp vanilla extract

A pinch of salt


Instructions – Cake

1. Preheat the oven to 175°C (350°F).


2. Beat the eggs, sugar, and vanilla for 2–3 minutes until slightly creamy.


3. Add the oil and mix well.


4. Sift together flour, baking powder, cinnamon, nutmeg, and salt.


5. Gently fold the dry ingredients into the wet mixture.


6. Add the sautéed carrots and walnuts (if using). Mix just until combined.


7. Pour the batter into a greased and lined 15×7 cm round pan.


8. Bake for 30–35 minutes, or until a toothpick comes out clean.


9. Let the cake cool completely.





Simple Cream Cheese Topping

Cream cheese

Milk (to adjust consistency)

Powdered sugar

Vanilla extract

A few drops of lemon juice (optional)


Blend everything together until smooth and lightly spreadable.
Spread over the cooled cake for a soft, simple finish.
