Creamy blueberry lemon cheesecake bars :)
🫐 Graham Cracker Crust
1 and 1/2 cups (180g) graham cracker crumbs (about 12 full sheets)
6 tbsp (85g) melted butter
1 tbsp sugar
♡ Press into a 9x9 inch pan lined with parchment paper
♡ Bake at 350F (177C) for 9 minutes
🫐 Crumble
3/4 cup + 1 tbsp (100g) all-purpose flour
3 tbsp (40g) brown sugar (I used dark brown sugar but light brown will work as well)
1/2 cup (100g) sugar
1/2 tsp vanilla
1 tsp cinnamon (optional)
6 tbsp (85g) melted butter
♡ Mix with a fork until crumbles form, then chill in the fridge while making everything else :)
🫐 Blueberry Sauce
3 cups (420g) frozen or fresh blueberries
1/3 cup (67g) sugar
1 tsp lemon zest
2 tbsp (30g) lemon juice
1 tbsp cornstarch
3 tbsp (45g) water
♡ Simmer over medium high heat for about 5 minutes
🫐 Cheesecake
1/2 cup (100g) sugar
1 tbsp lemon zest
16oz (452g) softened cream cheese
1 tsp vanilla
3 tbsp (45g) lemon juice
1/3 cup (80g) sour cream (or greek yogurt)
2 eggs (one at a time)
♡ Bake the assembled cheesecake at 350F (177C) for 35-40 minutes
♡ Let the cheesecake cool to room temperature and then cover and refrigerate for at least 3 hours (or overnight)
