Somas Recipe | Crispy Golden Coconut Delight

In this video, we'll be making a popular Indian dessert called Somas. Somas is a traditional snack that consists of a sweet coconut-based filling stuffed inside a flat, rolled dough that is deep-fried until crispy and golden brown.
For this recipe, we'll need some basic ingredients, including:
FOR THE DOUGH:
Maida [Flour]: 1 Kg
Water: 750 ml
Salt: 1/2 tsp
Sugar: 1 tsp
Oil: 2 tbsp
FOR THE FILLING:
Coconut shavings: 2 Coconuts
Sugar: 750 grams
Ghee: 3 tsp
Chopped cashews: 100 grams
Kas Kas [Poppy seeds]: 50 grams
Process:
Step 1: To start, we'll prepare the dough, we'll mix & knead together all the dry ingredients to make the dough, then slowly add more or less water as needed to make a soft and smooth dough that we can roll out into thin circles.
Step 2: Now, for the filling sauté the coconut shavings, cashews and kas kas for a few minutes to add more flavor, let them cool down and then mix these together along with sugar to form a perfect delicious filling.
Step 3: Once we have our dough circles, place a spoonful of the coconut filling in the centre and fold the dough over to seal it shut; you can either use the mould to get the required pattern or you can press the edges down with your fingers or a fork to create a decorative pattern, and then deep-fry the Somas until they turn light golden brown.
Step 4: Once they are cooked, remove the Somas from the oil and let them drain on a paper towel. And that's it! Our delicious Somas are ready to be enjoyed.
For this recipe, we're making enough Somas to serve 15 people. However, if you want to make a smaller or larger batch, you can adjust the ingredients accordingly. Remember to adjust the cooking time accordingly as well, and always taste as you go to ensure the perfect balance of flavours.
