🛒 *Ingredients:*
*For sautéing mushrooms:*
Mushrooms – 200g (button or cremini, sliced)
Butter – 1 tbsp
Oil – 1 tsp
Salt – *½ tsp*
Pepper – a pinch (optional)
*For the gravy:*
Butter – 2 tbsp
Oil – 1 tbsp
Cumin seeds – ½ tsp
Onion – 1 medium (chopped)
Ginger-garlic paste – 1 tbsp
Tomato – 2 medium (pureed or chopped)
Cashews – 10 (soaked for 10 mins)
Kashmiri red chili powder – 1 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
*Kasuri methi – 3 tsp (crushed)*
*Fresh cream – ½ cup*
*Salt – 1½ tsp*
Sugar – ½ tsp (optional)
*Garnish:*
Fresh cream drizzle or butter cube
Fresh coriander

👨🍳 *Preparation:*
1. *Sauté the Mushrooms:*
Heat 1 tbsp butter and 1 tsp oil in a pan. Add sliced mushrooms and ½ tsp salt. Sauté on high heat until golden. Set aside.
2. *Prepare the Gravy Base:*
In a pan, heat 2 tbsp butter + 1 tbsp oil. Add cumin seeds, then onions. Sauté till golden. Add ginger-garlic paste and cook till the raw smell fades.
3. *Add Tomatoes & Cashews:*
Add tomato puree and cook till oil separates. Add soaked cashews and a splash of water. Cook for 2–3 minutes. Cool and blend to a smooth paste.
4. *Cook the Gravy:*
Return the paste to the pan. Add chili powder, coriander powder, garam masala, and 1½ tsp salt. Add water as needed. Simmer for 3–4 mins.
5. *Finish the Dish:*
Add sautéed mushrooms, kasuri methi, sugar (optional), and fresh cream. Simmer for 2–3 minutes. Garnish and serve.
