Your Unity UI (menus, buttons, sliders, text) is organized on Canvases, but Canvases have a peculiar way they optimize themselves. They're cached into a data structure that's easier to feed to the graphics processor, BUT at the cost of expecting to ONLY update relatively rarely, because changes to UI components dirty the Canvas. But thankfully, Unity gives you a way to limit the expense of this dirtying and rebuild cycle, as explained in the video, which grealty reduces the cost of UI animations especially.
