Ingredients:
For Roasting and Grinding:
Cumin: 1/2 Tablespoon (Zeera)
Dry Coriander: 1/2 Tablespoon (Dhania)
Fennel Seeds: 1/2 Teaspoon (Saunf)
Whole Red Chilli: 4-5 (Sabit Laal Mirch)
Nutmeg: 1/2 Piece (Jaifal)
Mace: 1-2 Pieces (Javitri)
Dry roast and grind all the above spices well.
Other Ingredients:
Oil: 1/2 Cup
Onion: 1/2 Cup (sliced)
Black Cardamom: 1 (Bari Elaichi)
Cloves: 3-4 (Laung)
Cinnamon Stick: 1 (Dalchini)
Bay Leaf: 1 (Tez Patta)
Black Pepper: 8-9 (Sabit Kali Mirch)
Cumin: 1/2 Teaspoon (Zeera)
Star Anise: 1 (Badiyan)
Green Chilli: 4-5 (chopped)
Ginger Garlic Paste: 1 Tablespoon (Lehsan Adrak Paste)
Tomato: 1 Large (chopped)
Yogurt: 1 Cup (Dahi)
Crushed Red Chilli: 1 Teaspoon (Kuti Laal Mirch)
Chicken Powder: 1 Teaspoon
Salt: 1 Teaspoon (Namak)
Grinded Spices: 1 Tablespoon (from the roasted and ground mix)
Boiled Chickpeas: 1 Cup (Channa)
Dried Plums: 3-4 (Aloo Bukhara)
Water: 1/2 Jug
Sella Rice: 500 grams (Soaked for 30 minutes)
Green Chilli: 3-4 (Sbz Mirch)
Instructions:
Start by roasting and grinding the spices:
Heat a dry pan and add cumin, dry coriander, fennel seeds, whole red chillies, nutmeg, and mace.
Roast them on low heat until fragrant. Allow them to cool, then grind into a fine powder. Set aside.
Prepare the rice and chickpeas:
Soak the sella rice in water for 30 minutes. Drain and set aside.
Boil the chickpeas until they are cooked. Drain and set aside.
Cooking the base:
In a large pot, heat oil over medium heat.
Add sliced onions and fry until they turn golden brown.
Adding aromatic spices:
Add black cardamom, cloves, cinnamon stick, bay leaf, black pepper, cumin, and star anise. Sauté for a minute until fragrant.
Flavoring the base:
Stir in the chopped green chillies and ginger-garlic paste. Sauté for 3-4 minutes until the raw smell disappears.
Adding tomatoes:
Add the chopped tomatoes and cook until they soften and become mushy.
Yogurt and spices:
Stir in the yogurt and cook for 2-3 minutes on high flame, allowing the mixture to thicken.
Add crushed red chilli, chicken powder, salt, and the grinded spices. Mix well.
Chickpeas and plums:
Add the boiled chickpeas and dried plums (aloo bukhara). Mix everything together.
Adding water and rice:
Pour in the water and bring it to a boil.
Add the soaked and drained sella rice. Mix gently.
Cooking the pulao:
Add the green chillies on top.
Cover the pot and let the pulao cook on low flame for about 15 minutes. This step allows the flavors to meld and the rice to absorb the liquid.
Serving:
Once the rice is cooked and the water has been absorbed, fluff the pulao gently with a fork.
Serve the delicious spiced chickpea pulao hot as a main dish.
