Delicious Easy Instant Yaki~Soba (Fried Noodles Japanese style)

Mom is making 2 recipes today. The first one is Ginger Tsukudani. We ate some in Japan and wanted to eat it really badly. We found a recipe to follow. Ingredients are Ginger (thinly sliced) 1 cup, 1 packet of bonito flakes (Katsuo flakes), shoyu (2 tbsp) sugar( 2 tbsp), mirin (4 tbsp) and water (1 cup).
You first should soak the thinly slice ginger in water and then rinse it. Add all ingredients in the pan and bring to a boil for minutes. Lower hea~t to a simmer for about 20-30 minutes. If the water evaporates too quickly, add more water. It the ginger is still too tough. Simmer for a longer of time. all water should be gone. You can keep in refrigerator. Eat with some rice. Yum.
