Ingredients:
1–1 ½ kilos pork ribs
¼ cup vinegar
¼ cup brown sugar
¼ cup soy sauce
¼ cup ketchup
Pepper (to taste)
Ajinomoto (to taste)
Cooking oil (small amount)
Procedure:
1. Clean ribs — rinse well, remove bone fragments, pat dry.
2.Make marinade — mix vinegar, soy sauce, ketchup, sugar, pepper, and Ajinomoto.
3. Marinate ribs for 30 minutes to 1–2 hours.
4. Heat oil in kawali and use a brush to spread it evenly.
5. Fry ribs in small batches until caramelized; set aside each batch on a plate.
6. Return ribs to kawali, pour remaining marinade + a bit of water.
7. Cover and simmer on low heat for 45 min–1 hr until tender.
8. Uncover and reduce sauce until sticky, glossy, and caramelized.
9. Plate the ribs, then pour the reduced sauce on top.
10. Serve and enjoy!
