The Meat-Loaded Chili That Lost the Cookoff (But Won Something Better)

Today we’re flying solo — Mrs. Smith is at work, so I’m taking you along as I prep my chili for the annual Man Curch Chili Cookoff. I didn’t win last year… but a whole lot of guys asked for the recipe. The problem? I never write anything down. I cook with my heart.

So today, we’re recording it. For real. Forever.
And because FoodSmiths is all about finding a recipe we like, then forging it even better, we’re loading this chili with a TON of meat, layered flavors, and yes… the controversial secret ingredient revealed at the end.

🍽️ INGREDIENTS (Approximate)

(Because we’re finally writing it down!)

~1.5 lbs diced chuck roast

2 lbs ground beef

1 lb breakfast sausage

1 lb bacon (finely chopped & rendered)

1 large onion (split between pans)

Kinder’s Chili Seasoning

Dan-O’s Chipotle + Dan-O’s Taco

Taco seasoning

Dark chili powder

Garlic

6 oz tomato paste

1 can Rotel

28 oz fire-roasted diced tomatoes

29 oz tomato sauce

2 cans beans (optional… but recommended for competitions)

Bone broth + beef broth

Secret ingredient: pineapple 🍍
