Subah’s chicken madras recipe 👇🏼
Chicken madras for Heather
1kg chicken breast or thigh (marinated in a teaspoon of turmeric and half a tsp garlic puree)
3 onions chopped finely
1 heaped tablespoon garlic and ginger paste
1 tin chopped tomatoes
1 tablespoon tomato puree
1 teaspoon cumin seeds
1 teaspoon turmeric powder
Half teaspoon red chilli powder
1 teaspoon chilli flakes
Half teaspoon black pepper
Half teaspoon cayenne pepper
1.5 teaspoon salt (adjust according to your taste)
1 teaspoon coriander powder
1 teaspoon garam masala
1.5 teaspoon mild madras curry powder
1 small cinamon stick
Half a lemon
Half cup oil and a tablespoon butter
Fresh coriander to garnish
Start by adding the oil and butter to a pan along with the cumin seeds, cinnamon stick and garlic and ginger paste
Let them cook for a few minutes and then add in the finely chopped onions and cook until onions are slightly golden around the edges
Then add in the chopped tomatoes and tomato puree and half a cup of boiling water and cover and
cover and cook for around 15 minutes until the tomatoes are soft and the water has dried up
Use a masher to squash everything into a smooth ish sauce
Turn the heat up to high and add in the chicken and all of the remaining spices
Keep on high and keep stirring in between so the chicken doesn't stick to the pan - the chicken will release some water during this time which is fine, we want that to dry up
After around 15 minutes on high, add in a half cup of boiling water and cover and cook for around 30 minutes on low heat
By this time the chicken should be fully cooked and the sauce a nice consistency, if you want it more runny add in more water of you want it thicker just turn up the heat amd dry some of it off
Sprinkle over the fresh coriander and half a lemon and its done!
