This recipe is a specialty of Bacolod and Iloilo in the Philippines. A combination taste of Bulalo and Sinigang using Batuan for its unique sour taste.
Ingredients:
1kilo beef shank ( soak in water to remove blood,
boil with salt 1 minute on each side, then wash
thoroughly with water)
butter and annatto oil
onion 🧅
ginger
garlic 🧄
tomato 🍅
salt
beef shank
lemon grass
water
pepper
batuan ( or tamarind )
boil until tender in medium heat ( 1 1/2 to 2 hours)
or pressure cook for 30 minutes)
fish sauce
jackfruit
green and red chili🌶️
