Summer Salad with Strawberries and Peaches ( Serves 4)
Ingredients:
4 handful’s Green leaf lettuce or prepack washed salad greens
1 cup Fresh strawberries - sliced
1 Fresh peach - sliced into bitesize pieces
1 to 2 stocks of Celery - thinly sliced
1 cup mushrooms -sliced (about 4 to 5 mushrooms)
4 slices of bacon – crispy n crumbled (need tips on making crispy bacon? Check out 🥓➡️
¼ cup pine nuts
¼ cup goat cheese crumbles

Instructions:
On a large platter (shallow like a quiche dish) spread out the lettuce. Layer with mushrooms, celery, and strawberries.
Boil (on stove or in microwave) a few cups of water, enough to submerge the peach. Put peach in boiling water for 30 seconds and then put it in a bowl of ice water 1 minute to cool it. This makes it easy to peel. Peel and remove pit, chop in bitesize pieces and layer on top of strawberries. Sprinkle with pine nuts, bacon bits and goat cheese. Top with creamy lemon poppyseed dressing and serve.
If making ahead and refrigerating (a couple of hours OK – not overnight). Add the peach and dressing right before serving. This prevents peach from browning and lettuce from wilting.
