The easiest way to set up a gas grill for indirect grilling. If you do not own or have access to a smoker just use any gas grill and I can guarantee that your ribs will come out perfect. This recipe is a very simple one that lets you fully appreciate the taste of the ribs. We also show you how to set up your gas grill for spare ribs or any ribs for that matter.
Obviously, not all gas grills are the same, but you will get the basic idea of what to tweak to your own gas grill to trap as much indirect heating for your spare ribs. Enjoy!

Total cook time almost 5 hours.
I did the 3 - 1 - 30 method which means I did 3 hours cooking open air, and 1 hour wrapped in aluminum foil (technically I wrapped them for about 1 hour and 20 minutes). And then I did 30 minutes unwrapped so bbq sauce gets caramelized on the ribs. The ribs will be done after wrapping them in aluminum foil, but those last 30 minutes lets the bbq sauce bind really nicely to the ribs.
There are other methods such as the 2-2-1, 1-2-1, 30-3-1, etc. The ribs just cook a bit different with each method. If these methods confuse you, believe me it's much easier than what you probably think it is. Wrapping them in foil is the easiest way to tenderize the ribs, and to speed up the cooking process. Letting the ribs be in the open air gives it that smoke flavor or charcoal flavor.
