What was the number 1 pioneer treat out West? Popcorn. Popped flint corn. Even a poor homesteader could afford it. Men, women, & children alike loved it! And we still love it today.
So on this cold, damp day in December, let's make popcorn in a giant cast iron dutch oven... on a wood-fired cookstove from 1900. Cheers!
CAST IRON POPCORN:
2 TBS Lard
1/2 cup flint corn
good dash sea salt
Heat the oil until just starting to smoke. Pour in kernels. Shake cast iron skillet/pot (with lid) to prevent burning. Takes anywhere from 3-10 minutes. Salt at the end. Add butter at end if desired.
