How to smoke pulled pork on a Weber Smokey Mountain (WSM).
Smoking Temperature: 275 F
Overall Time: 10 hours
Initial Smoke: 6 hour
Spray with apple cider vinegar at hours 6, 7 and 8
Wrap in foil at 8 hours
Check doneness at around 10 hours
Done when pork has no real resistance when probed
Temperature will be around 205 F to 210 F
