🍗 Chicken Pulao Recipe
🕒 Prep Time: 20 mins
🍳 Cook Time: 40 mins
🍽️ Serves: 4-5
🧂 Ingredients:
For Chicken Masala:
Chicken – 500g (with bones preferred)
Onion – 2 large (sliced)
Tomato – 1 medium (chopped)
Ginger garlic paste – 1½ tbsp
Green chilies – 2 (slit)
Yogurt – ½ cup
Whole spices:
Bay leaf – 1
Cinnamon stick – 1 inch
Green cardamom – 4
Cloves – 4
Black pepper – 6-8
Cumin seeds – 1 tsp
Red chili powder – 1 tsp (adjust to taste)
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Salt – to taste
Fresh coriander & mint – chopped
For Rice:
Basmati rice – 2 cups (washed & soaked for 30 mins)
Water – 3½ cups
Oil – ½ cup (or mix of oil & ghee)
👨🍳 Instructions:
1. Cook Chicken Masala:
Heat oil in a pot. Add whole spices and let them splutter.
Add sliced onions and fry until golden brown.
Add ginger garlic paste, sauté for a minute.
Add chicken pieces, cook until they turn white.
Add tomatoes, green chilies, and all powdered spices.
Cook till tomatoes are soft and oil separates.
Add yogurt, cook for 5-7 minutes until chicken is 70% done.
Add chopped mint and coriander.
2. Add Rice:
Drain soaked rice and add it to the chicken.
Gently mix without breaking the rice.
Add 3½ cups of hot water and check salt.
3. Cook & Steam (Dum):
Cook on medium heat until water reduces and rice is almost cooked.
Lower the flame, cover tightly, and place on dum (steam) for 10-12 minutes.
🥗 Serve With:
Raita
Salad
Green chutney or lemon wedges
