Rainy season always calls for some hot and hearty soup!
Here's my version of a Filipino Classic. Hope you can all try it and enjoy as much as my family did!
Lomi ala Chefmom
Ingredients:
500 g Miki Noodles
10 cloves garlic
1 white onion, sliced
100 g Kikiam, Fried
150 g Pork Belly, sliced into thin strips, boiled
2 tbsp cold water, 1 tbsp corn starch (slurry)
1 1/2 Tbsp Patis (Fish sauce)
1Tbsp Soy Sauce
1 liter Pork Broth
1 pc Egg, lightly beaten
Black Pepper
Garnish:
Spring Onions
Fried Garlic Bits
Chicharon, crushed
Procedure:
1. In a sauce pot, add oil. Sauce onions till translucent. Add garlic and cook till light brown in color.
2. Add the pork belly and sauce till brown and crispy.
3. Add pork liver and sauce. Season with pepper and stir. Add the fish sauce and soy sauce. Let boil and then reduce to a simmer.
4. Add the fried Kikiam.
5. Add th Miki Noodles. After a minute, add the slurry. Cook on low heat till soup thickens a bit. Then add the beaten egg.
6. move from heat and serve. Top with garlic bits, chicharron and spring onions. Serve with soy sauce, calamansi and siling labuyo on the side.
