Garlic Tomato Mac & Cheese

Ingredients:
5 garlic cloves
2 tbsp Olive oil
4 tomatoes
Macaroni (as needed)
1 tsp sugar
1 tsp salt
½ tsp black pepper
½ tsp paprika
1 tsp dried oregano
1 tbsp tomato paste
A handful of fresh parsley (chopped)
150 ml heavy cream
150 g cheese (mozzarella, cheddar, or your favorite)
Instructions:
1. Cook the tomatoes and garlic:
In a large pan, add olive oil, whole tomatoes (uncut), and garlic cloves.
Cover and cook on low heat until the tomatoes become soft and the skins start to peel off.
2. Prepare the sauce:
Peel the cooked tomatoes, then mash or smush them in the pan.
Add sugar, salt, black pepper, paprika, oregano, and tomato paste.
Stir well and let the sauce simmer for a 8 - 10 minutes.
Add chopped parsley and mix it in.
3. Cook the pasta:
In a separate pot, boil water with a pinch of salt.
Add the macaroni and cook until al dente.
Drain the pasta.
4. Combine everything:
Pour the heavy cream into the tomato sauce and stir until smooth.
Add the cooked macaroni and toss to coat.
Sprinkle the cheese on top and mix until melted and creamy.
5. Serve:
Garnish with extra parsley if you like.
Serve warm and enjoy! 😋
