Hey foodies, check out this amazing White Mutton Korma recipe! Tender mutton marinated in yogurt, ginger-garlic paste, and kasuri methi, then cooked with a creamy paste of cashews, almonds, and melon seeds. White Mutton Korma
#### Ingredients:
*For Marination:*
500 g mutton
1 tsp salt
1 tbsp ginger paste
1 tbsp garlic paste
1/2 cup yogurt
1/2 tsp kasuri methi
1 1/2 tsp white pepper powder
*For Paste:*
10-12 soaked cashews
7-8 soaked almonds (skin removed)
1 tbsp soaked melon seeds
1/4 cup water
*Other Ingredients:*
1 tbsp oil
1 tbsp ghee
2 cloves
2 green cardamom
1 inch cinnamon stick
8-9 peppercorns
1 bay leaf
2 medium onions (chopped)
2 slit green chillies
1/2 cup water
1/3 cup cream
Salt to taste
*To Finish:*
1 tbsp chopped coriander
1/2 tsp garam masala
*To Garnish:*
Slit green chillies
#### Method:
1. Marinate the mutton with salt, ginger paste, garlic paste, yogurt, kasuri methi, and white pepper powder. Let it marinate for at least 30 minutes.
2. In a blender, blend soaked cashews, almonds, melon seeds, and water into a smooth paste. Set aside.
3. Heat oil and ghee in a pressure cooker. Add cloves, cardamom, cinnamon stick, peppercorns, and bay leaf. Sauté until fragrant.
4. Add sliced onions and slit green chillies. Cook until onions turn slightly brown.
5. Add the marinated mutton and fry for 2 mins on medium heat, now add 3/4 cup water and place the pressure cooker lid.
6. Pressure cook this for 6-7 whistles till its tender & the meat if just about ready to fall off the bone.
7. Check the salt and Next add prepared paste along with the cream and cook for 2 mins on medium heat.
8. Now add 1 cup water mix well & place a lid on it and let it simmer on low heat for 5-10 mins.
9. Once the oils form the masala seperate finish it the dish with come coriander and garama masala and cook for a min.
10. Remove form the heat and let it sit for 5 mins before serving.
11. Garnish with slit green chillies and serve hot with rotis or rice.
