In this lo Mein stir fry I used spaghetti instead of lo Mein noodles and also used a vegetarian oyster sauce to keep the classic lo Mein flavor. Chinese Vegetarian Spaghetti Stir Fry Recipe.
Today I'm going to show you how to make a very easy Chinese vegetarian lo Mein using spaghetti noodles, stay tuned.
I'm using my wok but you can use a deep skillet for cooking. My vegetables are prepped and ready because this skillet is going to go quickly. It's going to be ready in about 10 minutes. Heat on medium high. I'm starting with some oil and lots of minced garlic. I have already julienned my vegetables. Red pepper, green pepper, onion, carrots. This is all optional because you can use vegetables that you enjoy the most. You may add celery, hot peppers and green onions. I have some broccoli slaw on hand, so I'm adding that in tooo. I chopped the vegetables into julienne pieces so that they go well with spaghetti. Of course, you can use the vegetables that you like.
I'm adding in the cooked spaghetti. I'm going to add some dark soy sauce. This really adds the classic Chinese lo Mein flavor. Finally, I add oyster sauce. That's it! Give this a good toss to incorporate for about a minute and we are ready to eat. I love the taste and crunch of the vegetables. The spaghetti is a good substitute for the lo Mein noodles, but, it's not exactly the same. The Lo Mein noodles contain eggs and most dry pastas do not. The spaghetti texture is a smoother texture. The Lo Mein noodles have a denser and chewier bite. To make the spaghetti noodles a perfect substitution make sure not to overcook the spaghetti noodles. Chinese Vegetarian Spaghetti Stir Fry Recipe taste alike vegetable lo Mein
INGREDIENTS:
1/3 pound cooked spaghetti
6 garden onions - whites and greens separated - Jullienne
1/2 cup celery
1 cup bell peppers
2 cups fresh bean sprouts
2-3 red chili peppers - optional
3-4 cloves minced garlic
1 tsp. dark soy sauce or to taste
1-2 tbsp. vegetarian oyster sauce or to taste
oil - I'm using avocado oil - choose a healthy high temp oil
NOTE: Use the veggies you like. I used red pepper, green pepper, onion, carrots and broccoli slaw.
In a wok or deep skillet add oil, whites of garden onions, minced garlic, celery, and bell peppers. Cook and stir for 1-2 minutes.
Add bean sprouts. Cook and stir for 1-2 minutes.
Add cooked spaghetti, greens of garden onions, mushroom dark soy sauce, and vegetarian oyster sauce. Cook and stir for one minute until combined and spaghetti heated through.
Serve and enjoy.
