How To Make Kimchi & Cheddar Cheese Soda Bread - Recipe

Easy-to-bake soda bread gets a boost of flavour with kimchi and cheese.
INGREDIENTS
==========
1 egg
1 cup yogurt
1/4 cup melted butter
2 1/2 cups flour
1 tbsp sugar
1 tsp baking soda
1/2 tsp salt
7 oz (200g) cheddar cheese, chopped 1/4” (5mm)
1 cup hakusai (cabbage) kimchi, 1/2”-3/4” (20-25mm) pieces
DIRECTIONS
=========
1. In a large bowl, beat the egg.
2. Whisk in yogurt and butter.
3. In a separate bowl, combine the flour, sugar, baking soda, and salt. Mix into wet ingredients.
4. Mix in the cheese.
5. Gently mix in the kimchi.
6. Divide dough amongst two paper-lined pound cake tins.
7. Bake at 350°F (180°C) for 55-60 minutes - until a skewer comes out clean.
